I live in an area not noted for healthy eats. Due to recent issues, I've been making changes. I'm interested in Asian/wok cooking or really any other helpful tips.

I've pretty much reached my limit on sardines in olive oil. :)

geez, Hund, I've had all kinds. Just donated a brand new IMUSA 14" light cast iron wok to a local shelter today. I either had to get rid of it or get a larger kitchen. sent a 12" IMUSA back to Amazon yesterday, just didn't like it. Tossed a worn out (by my daughter), not safe non stick last week.

anxiously awaiting arrival of a Nordic 10" now, which I'm probably going to send back. If you really want to talk woks, I'm all in.

I just don't know how to cook on them.

made me laugh. which I do appreciate at this stage.

Edit to add: it's about 15 minutes later and I'm still laughing. if I listed 100 replies I could expect, that "ain't" one I could have come up with.

OK, ain't no expert on oriental cookery, but have 'always' had a wok on hand, since God was a boy. [Know what you mean about getting the size right].

3 tips I can pass on about using one -
1 - have it REALLY hot to start with;
2 - move the foods about in the wok by SHAKING the pan, not stirring with a fork or tongs, whenever you can manage that;
3 - keep a little water to hand ( I use hot from the kettle but there's a school of thought cold is better) so you can add a (very) little towards end of cooking - its the steam that cooks the food as much as the heat. Have a lid to hand too.

Many recipes don't remind you of these bits. I picked them up from various sources over the years & now try to combine them !

Oh, and don't go too heavy-handed with the oil, in the first place, esp. if you are adding other flavoured ones e.g. sesame, or a commercial sauce.

hello hund, I think we missed something again in the translation. You were apparently serious in asking if I had a wok, I took it as do we know what a wok is here. anyway, thanks for the reply. I am applying what you suggested and also, thanks again for making me chuckle, even if that wasn't your intent.

ML, you better trade mark that or I'm stealing it. :}

had no idea trying to eat healthy could lead to so many laughs.

Oh I intended to make you chuckle Rik, it was only a 1/2-serious enquiry !

Certainly wasn't assuming Yankees do not know what one is. Just wanted to make sure you were kitted-up to start with, while I thought about what help I might offer ...

'Sides, they do say a good laugh is great for one's general health & well-being.

Q now is - were my tips any help or do you JUST want peoples' favorite recipes ?

Right, wasn't going to comment but I will. We have a very large wok but not for healthy cooking! We deep fry everything in it, fish, potatoes, chicken you name it we deep fry it. Not in the least healthy but I love it, lol,lol.
