Why do vets say no food for 24 hours before any surgical procedures?

Isn't the stomach emptying time only a few hours, 3-4,  for a dog?

So 12 hours of no food such result in an entirely empty stomach.

Why?

They may throw up and choke themselves when the food regurgitates...when coming out of anesthesia..it is NOT 24 hours, just after midnight the day before a surgery.

Digestion can occur at different rates so to be safe no food or water for 8hrs or so to prevent aspiration of stomach contents.If the dog is intubated for the procedure then there is less chance for aspiration but it is still possiable.Anesthesia agents relax all muscles including the pyloric spincter which helps keep the stomach contents where they belong,in the stomach.
