Joan in my small town butcher shop the clerk is the butcher. I'm not sure how it is for you big city folks.

"...big city folks." That's a stretch. Town is ten miles away, our closest neighbor is 1/4 mile away through the woods, town was established in 1759 , population under 5,000....Battle of Kings Mountain ( turning point in the Revolution) is about twenty miles away in the next county. Sooo, not a big city, but the clerk is not the same as the butcher.....the clerk is at the check out, and the butcher is in the back at the meat department. The clerks here wouldn't know a cut of meat from meat loaf.

Ok so you don't qualify as big city. Best I could come up on short notice with. We have a few butcher shops here though that you pay back at the counter. That is all it is, is a butcher shop. We take a cow there and he does the complete job. from the hoof to the package to taking our money.

by the way my home town is mio michigan population of less then 2000. so its still bigger then my hometown. lol
