I can see why their vet might be reluctant to have him stay at the
surgery overnight anytime.  Think Partisan is dead on right about
them needing a new vet.  We do have to remember that vets and
their staff are often not experts in training or behaviour issues, or
large active breeds for that matter.

Not entirely sure this dog would be growling at you if he was just
barking in kennel frustration.  However, I think Partisan's methodical
approach is one I'd try if I were faced with this situation.

I have read and re read almost every post and thought a lot of what i would do in this situation. and my ideas finish up much the same as Kyto. and i really think what he said is the way to go about it. NO animal will go thirsty or hungry for long unless it is pining for home or its owner then it will hold out a bit longer but not on what you have said that is nothing to do with this problem? The Dog has got its own way too long  from its owners who have been doing excatly the opposite of what they should have done in the beginning? Try Kytos way i think it is the way to go

LOVED  Kyto's remark about the Reset button,
wouldn't that be great, if they had one.  LOL
