When do u guys recommend starting a dog in defense work ? What age?

It not about age for me it's about mental state I've had a male who was good at a year and others who mature a little slower. Learn to read your dog .don't rush him there is know hurry. Find a good trainer let him work the dog for a while he will read the dog if u can't. Out of curiosity how old is your dog and what breed. How long are u doing bit work.

He's about 11 months now , been doing nothing but working his oready intense prey drive , very capable big promising dog on the sleeve and genuinely loves to fight with a big calm grip , last few months I've seen him get into defense mode and getting territorial both people and male dogs but only when he's home .I don't want to rush him into it yet but I believe he has it and is ready , he's a German shepherd from Czech , Belgian , wgwl lines

You can comfortably wait until he is 18 months and the dog will be better for the wait. Biggest mistake most handlers and trainers make is " moving too fast"...... Let a puppy be a puppy. Good foundation work in prey and grips will pay dividends when the real stress comes.

The time and pace is dictated by the individual dog.

I agree that time and place is dictated by the dog, the problem is the majority of trainers/handlers are not adept at reading a dog and understanding the art of training a dog in defense. When training in defense, mistakes made early(age) can have everlasting effect on the dog( forms of avoidance) whereas as the dog matures mentally the latitude for those mistakes, being able to be rectified or corrected, improve substantially. If you are asking this question in search of an answer, instead of rhetorically, then you do good to wait until the dog is older, from my perspective.

How is defence useful in a working dog??

without civil agression/defence your dog is only good to apport a sleeve,
when we make difference between sport and workingdog I would say a sportdog can do without, but patrol, police, army etc CANNOT do without
and also the sportdog is a better dog and easyer trainable dog when he has better balance between prey/defence,

But today we don,t see any serious defense work on the sport fields and even by LE /Military departments a lot  people/decoys 
today don,t see the good different working in prey or serious defense in NATURAL
behaviour. Helpers or decoys who understand and can work in serious defense are also  rare find what Gustav is saying.............

Also agree some dogs are mental easier adult than other most malis are

global mature quicker than GSD my experience take your time  I will say

begin @ 12 months is a good age slowely but  some dogs have good defense genetic  other not  I will l not wasting time in dogs who don,t have genetic not good natural  defense. I,m talking about  SERIOUS defense

Today  on the sportfield they call sleeve work protection it ISN,T  its always prey the focus is on te sleeve not the agressor or man.

If you wanna train like this you can start foundation @ 10weeks old

very social dog, easy trainable, good nose/detection, full hard grips on the sleeve, strong nerves and will protect naturally, when trained in sport, allways clean on te sleeve
