We are trying to fill in the paperwork for our new addition. He is primarily cream in color-probably 75% cream and 25% white. However, the options for color on the akc paperwork are black, black and cream, black and red, black and silver, black and tan, blue, gray, liver, sable, white, and bicolor. I emailed akc and asked for advice and they recommended bicolor...obviously terrible advice(bicolor is a kind of black and tan). Please help! What would y'all recommend? Thanks a ton, Jason

Just go with white, it doesn't really matter that much anyways, especially in your case since you won't be able to show your dog in conformation.

Jason could you post a photo of the dog? Even a bad photo is better then a guess.

What's to guess ?
In England we often call these "Champagne" to distinguish them from all-over 'white' GSDs - but so few 'whites' don't have any shading at all, anyway.  You won't find that in anything put out by our Kennel Club, either.  One thing at least the KC gets right - except it still allows registration of 'white' dogs, 'blue' dogs, 'liver' dogs ... and 'non-standard colour' dogs.
