If it's whole chicken it usually takes round 90 minutes, if its chicken pieces it usually takes round 60 minutes. We usually grill in several (tins), after 60 minutes we open one of them and taste and make a guess how long it needs more to be ready for eating. The good thing about this method is the meat gets well done while still juicy and not over burnt. I can assure you it's delicious and healthy grill and very economic you don't need to buy charcoal, it's also good for 4pack who doesn't like charcoal grill.
There is one more common type of underground built grill we use over here called Zarb, if any one is interested I can take pictures and explain how we cook in it.

We never had such fires here in Jordan as we see in the US in dry seasons, we have very limited green areas with trees and they are on limited areas not as big as the forests you have over there. We just be careful and near where we're cooking and put the fire out completely before we leave the place. One more thing we do is we make a sort of fence round the spot where the fire is with stones.

That's pretty freakin' cool. I'd love to see and hear about the other method Ibrahim. I like learning new ways to cook over fire.
