I also, believe in feeding a higher protein. Large breeds grow at such a fast pace, their body needs the protein for the developement of muscle and for Energy.
The real concern is the Calcium/Phosporus ratio.
You can feed an adult feed with a higher protein concentration to a puppy, because the Cal/pHos, ratio is the same as if you were feeding a large breed puppy food.
I would not feed a Puppy food of any protein concentration, because the Cal is too high, in the Cal/Phos, ratio. typically though puppy food is high in Protein and High in Ca. Which is why they developed the large breed formula for puppies.
I might be confusing you, Sorry.
There is no point in feeding a low protein kibble to turn around and add 100% protein in the form of hamburer or whatever.
I do believe in feeding hamburger or other sources of meat to my dogs ,and puppies, because they are carnivoirs by design. My point , is that they do need a higher protein for energy and developement. So, get a kibble that has that as well as feeding raw, as you desire.

I think one should increase the food intake gradually rather than feeding 2 lb one day than 4 lb the next day, i.e. 10 to 20% increase every week until the dog is at its correct weight.

My boy was 38lbs at 5 months and now he is a normal size-towards the top of the height standards...so you never know.
