Mmmmm Melissa that sounds good. Will have to try that one. I have done the bacon on top of the meatloaf and that was really good too.  And Travels you know you shouldn't be talking about such wonderful sweet things this early in the day....YUMMY. I love cherries. This summer I had my first fresh cherries even and dang I loved them.

Thanks guys, I'm drooling just reading these recipes, lol. They all sound so good, I'm not very good at the cooking but I might just treat the wife with one of these, can't wait.

I've decided I will be making moussaka with my homegrown tomatoes and eggplant, and ground lamb that I just bought. I have not made one of those in a very long time, but the Greek restaurant who made it the best, is gone. :(  So, maybe someone who is Greek has a great recipe? LF... aren't you of Greek heritage? I'll also take a great Baklava recipe, too. I miss that little ol' lady who made the stuff.

And the saddest part is, if I order either of these dishes and it isn't up to her standard, I get very disappointed and wistful, even. Kind of like that song, except it would be, " ...Someone left the baklava out in the rain! And I'll never get that recipe .... Aaaa... G A I N ...!!!!  Omg Smile

My towns having a Perogi cookoff on sunday so I'm making perogies all day today.

We each must bring 3 different kinds. I'm making Whitetail Cheese Steak perogi, Apple Pie perogi and Susquehanna Catfish perogi. Got the deer and catfish myself and the apples grow out back. Simple enough. lol

I figure I make 75 of each that will be good. So far since 5:00am I made 75 Apple Pie and about 40 Whitetail Cheese Steak .. this is taking forever. I don't use measuring cups and spoons but here's what you need for the dough. The filling is simple just use your favorite Apple Pie recipe, Catfish recipe and Cheese Steak recipe.

Dough : the trick is to let the dough sit with a warm cloth covering for at least an hour before use. And I use a 9 lives cat food can for a perogi cutter because it has a rim around the top - seals the perogi nice. Haven't had a break open since that lady on youtube told me about the cat food can years ago. (lol)

This won't help much but ...

Flour (I used (2) 5 pound flours minus about two cups to dump on my table to roll. (lol)
Sour Cream (about 4 cups I dunno for sure I make my own and just used the whole small crock of it. (lol)
Salt
Soft Butter (I make my own butter so I'd say 1 pound of it)
Eggs (I use my chicken eggs and they are rather large compared to the stores - but I used 5 whole and 3 whites only)
Potato Water (just boil potatos and use the water after it cools - the starch helps the flour set during the hour with the warm cloth)

The scraps of dough you can color with food coloring and use as playdough. I already sent the first batch off down to a neighbor kid. It's safe and non-toxic if the kids get it in their mouth.

10 min soup

3 cups frozen peas
1 large onion
4 cups broth ( whatever you have on hand)
salt,pepper, garlic powder to tast

Fry onion in bottom of soup pan.  I use butter but it works with anything
when onions are clear toss in frozen peas and broth

Bring to a boil and simmer for 10 minutes.  Blend and eat! Easy peezy!

Applefest continues at my house....made an awesome German apple cake with a recipe from Allrecipes today....easy as could be & really tasty!
grease & flour 9 x 13" pan, preheat 350' oven,
2 cups All purpose flour
2 eggs
1 to 1/2 cup of cooking oil (the recipe called for 1, but some of the reviews said they tweaked it to 1/2 with good results, & I actually used 1/2 cup of shortening, because the only cooking oil I had on hand was EVOO...not so yummy for cakes, LOL!)
1 to 2 cups of sugar (I used 1 1/2, 1 reviewer even used only 1/2 cup, but she added applesauce)
1/2 tsp salt
1 tsp vanilla
3 tsps cinnamon
1 tsp baking soda
4 to 5 cups of finely diced, cored, & peeled apples
mix your flour, salt, cinnamon, & baking soda in a small container
beat the eggs & oil together with an electric beater until frothy, add the sugar, beat until creamy, add vanilla...mix in the flour mix....batter will be heavy & thick. Fold in the apples, & spread batter in the prepared pan. Bake for approximately 45 minutes, or until cake tests done. It turns a dark golden brown with a crispy crust, almost like a cookie coating.....dust with confections sugar or frost with cream cheese frosting, OR
Do what I did, serve warm from the oven with a scoop of Rum Raisin ice cream!
