Ya, baking all night over here. I got off work before noon just to sleep a few hours during the day. Wish I could throw a bakers dozen of grenades in the air and get pies. LOL

What pies are you making BeeTree ? I'm making peach, apple, sweet potato, shoo fly and milk pie. I need at least 3 of each. I already made the pie dough and it's ready in the fridge. I didn't even get started yet, I think sleeping during the day makes me more tired. Glad it's not a habit. Figure I percolate some 8 O'Clock coffee awhile. lol 

I'm not making cookies till Christmas - pies and breads only this Thanksgiving. Wish I didn't have 3 jobs, that would help. Ha

Hey, making pies we have about 35 mins between each bake - plenty time to discuss "intelligent design"  LOL

BE4U, I make a pumpkin cheesecake with a pecan-graham cracker crust and bourbon sour cream topping. I dare not show up without it. Also, a triple berry pie, and I think I"m going to do something called apple-raspberry, (there is usually store bought reg. apple brought by somebody].... and I think I want to make a chocolate pecan pie, too. And if I have time I will make either a coconut custard or a lemon meringue pie.  One of these I will leave home or double up.... we'll see how the energy flows. LOL

Right now, I am finishing up a pot roast, hopefully so I don't have to cook dinner while I cook pies the next few meals. LOL  I love leftovers for teen boys, and the microwave. They get out of school early tomorrow, too.

Your pies sound real good too, especially the sweet potato one, never made one of those myself.

You have me thinking now about cheese cake - I think I'm going to try a sweet potato cheesecake with some kind of pecan topping. I have plenty of pecans and always have leftover sweet potato smash after the pies. Thank for the idea. 2nd cup of coffee !!!  lol

That will probably be a hit, BE4U. Grind up some of those pecans and use them in the crust. Don't be stingy with the butter. The thing with the sour cream topping, it is simple and makes such an elegant impression when you cut it. I top mine with whole pecans, like a clock. Just take a container of sour cream, add a bit of sugar, and flavoring... that could mean bourbon or vanilla. Return to oven to set about 5 minutes, remove. Garnish. I think your variation could be equally successful.  If you do make it, I'd like to hear how your creation went over with the crowd. 

My sister's sister-in-law and I totally agree, that with my cheesecake, it is best the next day with our morning coffee. We are in absolute heaven, then.
