Pardon my ignorance....what does "proofed" mean?

Proofed usually means you've tested your dog's training with distractions.
He sits at home or in the backyard or park. So he knows what the command means.
Will he sit when there is a room of dogs around or in front of a busy Walmart or when a squirrel runs by or in the
middle of a group of strangers etc.  OR under trial conditions ;-)
