Her name is Heidi, they are guessing she's between 4-5 years old. All they told us was that she was a stray who was spayed but not chipped. She knows the command come, but that's about it. She is potty trained, no accidents at home so far, and she stays out of the kitchen when we are cooking, we never told her she was to stay out of the kitchen so we are guessing her previous owners didn't allow her there.

Hard to say, but she's a fine looking girl. There's definitely some German Shepherd in her, it's clear from the structure of her head; could be a GSD/Malinois cross, but frankly it's also possible that she's full GSD--there are folks who breed specifically to produce the colors and patterns that are undesirable or disqualifying by the breed's standard, and that includes people who breed for solid tans with just the half-mask on the face [I think they refer to them as 'champagne' colored, but I could be wrong].

There's nothing inherently wrong with dogs that are off-standard colors per se, IMO--they just shouldn't be used for breeding, and there's no good reason for someone to breed specifically for off-standard colors...but as active companions and family members and even for actual work in herding, protection, law enforcement, etc. [if they have the instincts and correct drives for the latter things] I believe that there's no bad color for a good dog. She sounds like she's fitting in with your family nicely, and while she will probably start showing you some of her little tics and traits [we all have 'em, people and animals alike!] after she decides her place with you is secure, it certainly seems as if you've got a great new addition to your family! Congratulations, and thank you for opening your hearts and home to her!

That's my opinion, too, after looking at the face especially. Pure GSD without a saddle, or the black mask and the black on the tail.

The heads on the American line dogs are more refined than the German dogs. That photo with the closeup of the head reminds me very much of the head of my first GSD, who was likely an American line dog. (She was a rescue, so no pedigree.)
